Ingredients
Filling
- 4 cups fresh blueberries
- ⅓ cup sugar
- 1 tablespoon flour
- Zest of 1 lime
- Juice from 1 lime
- ½ teaspoon cinnamon
- ½ teaspoon salt
Topping
- 1 ½ cups flour
- 2 tablespoons unsweetened coconut flakes (finely processed)
- ⅓ cup sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- 6 tablespoons butter (cold and cubed)
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Coarse sugar (for sprinkling)
Instructions
- Preheat Oven: Preheat your oven to 375ºF (190ºC) to ensure it reaches the right temperature for baking the cobbler evenly.
- Prepare the Filling: In a large bowl, gently toss together the fresh blueberries, sugar, flour, lime zest, lime juice, cinnamon, and salt. This mixture will form the juicy flavorful base of your cobbler. Once combined, transfer it evenly to a 9-inch pie pan or baking dish.
- Make the Topping: In a medium bowl, whisk together flour, finely processed coconut flakes, sugar, baking powder, salt, and cinnamon. Using a pastry cutter or your fingertips, cut the cold cubed butter into the flour mixture until it resembles coarse crumbs. Pour in the vanilla-infused heavy cream and stir gently just until the dough begins to come together. Avoid over mixing to keep the topping tender.
- Assemble the Cobbler: Using an ice cream scoop or spoon, dollop the topping dough onto the blueberry filling, spacing the mounds slightly apart. Sprinkle coarse sugar on top of the dough for a crunchy finish.
- Bake: Place the cobbler in the preheated oven and bake for 35 to 45 minutes, or until the topping is golden brown and cooked through, and the filling is bubbly.
- Cool and Serve: Remove the cobbler from the oven and let it stand about 10 minutes to cool slightly and allow the filling to set. Serve warm, ideally with a scoop of vanilla ice cream for a classic combination.
Notes
- For best flavor, use fresh, ripe blueberries; frozen can be used but may affect texture slightly.
- Do not overmix the topping dough to prevent it from becoming tough.
- If you prefer a less sweet cobbler, reduce the sugar slightly in either the filling or topping.
- The coconut flakes add a subtle nutty flavor but can be omitted if desired.
- Ensure the butter is very cold for the best flaky topping texture.
