This Berry Parfait is a delightful and easy-to-make dessert featuring layers of fresh strawberries, blueberries, creamy instant pudding, whipped cream, and tender pound cake cubes. Ready in just 15 minutes, this parfait makes a perfect treat for gatherings or a refreshing summer dessert, beautifully garnished with fresh mint.

  • Total Time: 15 minutes
  • Yield: 12 servings

Ingredients

Fruit

  • 2 cups strawberries, sliced (reserve 3/4 cup for garnish)
  • 1 cup blueberries
  • 3 sprigs mint for garnish

Pudding Mix

  • 1 (3.4 ounce) instant pudding mix packet
  • 2 cups milk

Other

  • 1 pound pound cake, cut into 3/4″ cubes
  • 1 cup heavy whipping cream

Instructions

  1. Prepare Strawberries: Wash, hull, and slice the strawberries, then set aside about 3/4 cup for garnish.
  2. Make the Pudding Mixture: In a large bowl, whisk together the instant pudding mix and milk until smooth and thickened, about 2 minutes. Set aside to chill slightly.
  3. Whip the Cream: Pour the heavy cream into the bowl of a stand mixer and whip on medium-high speed until stiff peaks form. This will add lightness to the pudding mixture.
  4. Combine Whipped Cream and Pudding: Turn off the mixer and gently fold the whipped cream into the pudding mixture using a rubber spatula until fully combined and no streaks remain, creating a smooth, airy mixture.
  5. Assemble the Parfaits: Distribute the pound cake cubes evenly among six 9-ounce clear cups. Spoon a layer of the pudding mixture over the pound cake, then add a layer of the diced strawberries.
  6. Add Blueberries and Additional Layers: Spoon another layer of pudding mixture over the strawberries, followed by a layer of blueberries for added texture and flavor.
  7. Finish and Garnish: Top each parfait with the remaining pudding mixture or a dollop of whipped cream. Garnish with the reserved fresh berries and mint sprigs for a fresh and colorful finish. Serve immediately and enjoy!

Notes

  • Use fresh, ripe berries for the best flavor and texture.
  • Instant pudding mix can be vanilla or any berry flavor to complement the fruits.
  • Pound cake cubes can be substituted with sponge cake or angel food cake if preferred.
  • To make this dessert ahead, assemble the parfaits but add fresh berries and mint garnish just before serving to maintain freshness.
  • For a lighter version, use reduced-fat milk and whipping cream.
