Instructions
- Make the Whipped Cream Mixture: In a large bowl, beat the softened cream cheese and confectioners’ sugar using a hand mixer or stand mixer until the mixture is smooth and creamy. Gradually add the heavy whipping cream and vanilla extract, then continue beating on medium-high speed until stiff peaks form, indicating a thick, fluffy cream.
- Layer 1: Spread a thin layer (about 1 to 2 tablespoons) of the whipped cream mixture evenly over the bottom of an 8×8-inch baking dish to prevent the graham crackers from becoming soggy beneath. Place a layer of graham cracker sheets on top, breaking them as needed to fit an even layer. Spread one-third of the whipped cream mixture evenly over the crackers, then top with half of the sliced strawberries and half of the blueberries.
- Layer 2: Add another layer of graham crackers over the fruit. Spread the next one-third portion of the whipped cream mixture evenly, then add the remaining strawberries and blueberries on top.
- Layer 3: Place the final layer of graham crackers on top, then spread the remaining whipped cream mixture evenly, smoothing it out into an even layer.
- Chill: Cover the cake with plastic wrap or a lid and refrigerate for at least 6 hours, preferably overnight. This chilling time allows the graham crackers to absorb moisture from the cream and soften, while the flavors meld beautifully.
- Garnish and Serve: Before serving, top the cake with extra strawberries, blueberries, and fresh mint leaves if desired. Slice the cake into squares and serve chilled for a delicious, creamy, and fruity dessert.
