Beets

Instructions
- Cook the Beets: Boil or roast the beets until a knife slides easily into the center. Allow them to cool, then peel the skins off gently.
- Slice the Beets Thin: Using a sharp knife, cut the cooled beets into even, thin rounds to ensure smooth layering in the terrine.
- Prepare the Cheese Filling: In a bowl, mix goat’s cheese with Greek yogurt, lemon juice, salt, and pepper until the mixture is creamy and well combined.
- Line the Mold: Line a loaf pan or terrine mold with parchment paper. This helps in lifting the terrine out cleanly after setting.
- Start Layering: Spread a thin layer of the cheese mixture on the base, then layer beet slices on top. Repeat the pattern, pressing gently after each beet layer to remove air gaps and compact the terrine.
- Press and Chill: Press the layers firmly and cover the terrine. Refrigerate for at least 2 hours to let it set and the flavors meld.
- Unmold and Slice: Once firm, carefully lift the terrine out using the parchment. Slice neat, even pieces with a sharp knife for serving.
- Add Finishing Touches: Drizzle olive oil over the slices, sprinkle fresh dill or thyme, and add crushed walnuts. A light honey drizzle can be added for a touch of sweetness.
- Serving Step: Serve the terrine chilled, accompanied with fresh bread, mixed greens, or a handful of nuts for added texture and balance.
