Instructions
- Combine dry ingredients: In a bowl, combine the Maseca, all-purpose flour, and salt. Mix thoroughly to ensure even distribution.
- Add water and form dough: Slowly add the hot water while mixing by hand. Continue until a smooth, moist dough forms, adding up to 2 more tablespoons of water if needed for consistency.
- Rest the dough: Cover the dough and allow it to rest for 25 minutes to hydrate fully and improve texture.
- Divide dough: Divide the rested dough into 8 equal-sized balls, ensuring uniform thickness.
- Shape patties: Gently pat each ball into a thick patty roughly 2–3 times thicker than a regular tortilla to accommodate filling.
- Cook on skillet: Heat a skillet or griddle over medium heat. Cook each gordita for 2 to 3 minutes per side until they develop a light golden color and are cooked through.
- Prepare for frying: Transfer the cooked gorditas to a plate. Add enough oil to the skillet to just cover the bottom and heat over medium heat.
- Fry gorditas: Fry two gorditas at a time for about 1 minute per side. They should puff up slightly and develop a crispy outer layer.
- Drain excess oil: Remove the gorditas and drain on paper towels, allowing them to cool for a few minutes.
- Fill gorditas: Carefully slice each gordita open without cutting all the way through. Fill with warmed refried beans and any other desired toppings such as cheese, salsa, or avocado.
