- 2.5 cups soy milk
- 1 diced banana

Instructions
- Prepare the Milky Date Caramel: In a small blender, combine the pitted Medjool dates, almond butter, 1/2 cup dairy-free milk, and a pinch of sea salt flakes. Blend until you achieve a smooth, creamy caramel consistency. Set aside.
- Prepare the Overnight Oats: In a large container with a lid, mix together the chia seeds, rolled oats, 2.5 cups of soy milk, and the diced banana. Stir well and refrigerate for at least 4 hours or preferably overnight to allow the oats and chia seeds to absorb the liquid and soften.
- Assemble the Banoffee Overnight Oats: To serve, layer the oat and chia mixture with the milky date caramel, add sliced banana on top, and dollop the dairy-free yogurt over it. Optionally, sprinkle raw cacao powder for a hint of chocolate flavor and enjoy immediately.
