Ingredients
Chicken and Seasonings
- wooden skewers, soaked in water for 30 minutes
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon extra virgin olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Bang Bang Sauce
- 1 ¼ cups (290 g) mayonnaise
- ⅔ cup Thai sweet chili sauce
- 2 teaspoons Sriracha (or more to taste)
- 2 tablespoons honey
Instructions
- Season the chicken: In a large bowl, combine the cubed chicken breasts with olive oil, paprika, garlic powder, kosher salt, and black pepper. Toss all ingredients thoroughly to ensure each piece of chicken is evenly coated with the seasoning mixture.
- Thread chicken onto skewers: Working one skewer at a time, carefully thread 4-5 pieces of the seasoned chicken cubes onto each pre-soaked wooden skewer, taking care not to overcrowd.
- Prepare the bang bang sauce: In a small bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey until the mixture is smooth and well combined. This makes approximately 1 ¾ cups of sauce.
- Apply initial sauce coating: Divide the bang bang sauce in half. Use one half to brush evenly over the assembled chicken skewers to add flavor before cooking. Reserve the other half for serving.
- Preheat and air fry the chicken: Place the chicken skewers in a single layer inside the basket of your air fryer. Depending on your air fryer’s size, you may need to cook in batches. Set the air fryer to 400°F (204°C) and cook the skewers for 11-12 minutes, flipping halfway through the cooking time to ensure even browning and doneness. The chicken is fully cooked when it reaches an internal temperature of 165°F (74°C).
- Finish and serve: Once cooked, transfer the chicken skewers to a serving plate. Drizzle or brush the reserved half of the bang bang sauce over the hot skewers for extra flavor. Serve immediately while warm for the best taste and texture.
Notes
- Soaking wooden skewers in water prevents them from burning during cooking.
- Adjust the amount of Sriracha based on your preferred spice level.
- Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for safety.
- These skewers can also be grilled or cooked under a broiler if an air fryer is not available.
- Serve with extra bang bang sauce on the side for dipping.
