Ingredients
Salmon and Vegetables
- 1 pound (450g) salmon fillets, divided
- 1 pound (450g) medium-thick asparagus, woody ends trimmed
Sauce and Seasoning
- 2 tablespoons vegetable broth or chicken broth
- 1 1/2 tablespoons fresh lemon juice, or to taste
- 1 tablespoon of your favorite hot sauce (we used Sriracha)
- 4 teaspoons minced garlic (about 4 cloves)
- Salt and fresh ground black pepper, to taste
- 3-4 tablespoons butter, diced into small cubes (or ghee)
- 2 tablespoons fresh chopped parsley or cilantro
Instructions
- Preheat your oven. Set your oven to 375°F (190°C) to prepare for baking the salmon and asparagus foil packs.
- Prepare the sauce mixture. In a small bowl, combine the vegetable or chicken broth, fresh lemon juice, your hot sauce choice, minced garlic, salt, and pepper. Mix well to integrate all flavors.
- Assemble foil packets. Lay out large sheets of aluminum foil. Place a portion of the salmon fillets in the center of each sheet. Surround with trimmed asparagus. Spoon the lemon garlic butter sauce evenly over the salmon and asparagus. Scatter small cubes of butter over the top and sprinkle with chopped parsley or cilantro.
- Seal the foil packs. Carefully fold and crimp the edges of the foil to create sealed packets ensuring steam will remain inside during cooking.
- Bake the packets. Place the foil packs on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the salmon is opaque and flakes easily with a fork, and asparagus is tender-crisp.
- Serve. Carefully open the foil packets to avoid steam burns. Transfer the salmon and asparagus onto plates and spoon any remaining lemon garlic butter sauce from the packet over the top before serving.
Notes
- You can substitute ghee for butter to make this dish dairy-free.
- Adjust the amount of hot sauce to your preferred spice level or omit it entirely for a milder flavor.
- Using parchment paper instead of foil is an alternative for easier cleanup with less environmental impact.
- Cooking time may vary slightly depending on the thickness of the salmon fillets; check for doneness starting at 20 minutes.
- This recipe can be doubled or tripled easily by preparing more foil packets.
