- 2 Tbsp olive oil
- 1.5 tsp mild curry powder
- 1/2 tsp ground ginger
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat Oven: Set your oven to 400°F (200°C) to ensure it reaches the right temperature for baking the chicken thighs evenly and developing a lovely golden exterior.
- Mix Ingredients: In a large mixing bowl, combine the olive oil, mild curry powder, ground ginger, garlic powder, onion powder, salt, and pepper. Toss the chicken thighs in this mixture, making sure each piece is thoroughly coated with the spices and oil.
- Optional Marinate: For enhanced flavor, you can marinate the spice-coated chicken thighs for anywhere from 30 minutes up to 24 hours in the refrigerator. Although this step is optional, it helps deepen the flavors. If short on time, you can proceed directly to cooking.
- Prepare Baking Sheet: Line a large baking sheet with parchment paper to prevent sticking. Arrange the chicken thighs in a single layer with some space between each piece to allow for even cooking.
- Bake Chicken: Place the baking sheet in the preheated oven and bake for 25 to 30 minutes. Bake until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through, with juices running clear.
- Rest Before Serving: Remove the chicken thighs from the oven and let them rest for 5 minutes. This resting period allows the juices to redistribute, making the chicken more succulent and flavorful.
