For the Wings
- 1 tablespoon kosher salt
- 2 teaspoons garlic powder
- 2 teaspoons paprika
- 4 pounds chicken wingettes or drumettes
- 2 egg whites, beaten until frothy
For the Buffalo Sauce
- ½ cup hot sauce, such as Frank’s Red Hot or Louisiana Wing Sauce
- 1 teaspoon honey
- 4 tablespoons salted butter

Instructions
- Prepare oven and pan: Preheat your oven to 450°F and position a rack in the center. Line a rimmed sheet pan with foil for easy cleanup and place a cooling rack inside it, which will allow air to circulate around the wings for even cooking.
- Season wings: In a large mixing bowl, combine kosher salt, garlic powder, and paprika. Add the chicken wingettes or drumettes to this seasoning mix and toss thoroughly until every wing is evenly coated with the spices.
- Add egg whites: Pour the beaten frothy egg whites over the seasoned wings. Toss again to ensure the eggs coat the wings evenly, which helps with crispiness and coating adherence.
- Arrange and bake: Arrange the wings skin-side up on the prepared cooling rack inside the sheet pan. Lower the oven temperature to 425°F. Bake the wings for 45 to 50 minutes until the skin is golden, crispy, and the internal temperature reaches 165°F measured with an instant-read thermometer.
- Make buffalo sauce: While the wings bake, prepare the sauce. In a small saucepan over medium-high heat, whisk together hot sauce and honey until it starts to simmer. Add the butter and continue to cook, whisking occasionally, until the butter melts completely. Remove from heat.
- Toss and serve: Once wings are cooked, transfer them to a large bowl and pour the hot buffalo sauce over them. Toss well until all wings are fully coated in the sauce. Serve immediately with blue cheese dressing and celery sticks on the side for dipping.

- For extra crispy wings, ensure the wings are dry before seasoning and use a cooling rack to allow heat circulation.
