Salsa Ingredients
- 1 cup diced strawberries (a little more than a half pound of strawberries)
- 1 cup diced ripe mango (from 2 large mangoes)
- 1 avocado, diced
- 1 jalapeno, seeded and diced
- 2 tablespoons finely diced red onion
- 2-3 tablespoons diced cilantro
- 1 small lime, juiced
- ¼ teaspoon salt, plus more to taste
For Serving
- Multigrain pita chips, for serving/dipping
Instructions
- Combine Ingredients: Place the diced strawberries, diced mango, diced avocado, seeded and diced jalapeno, finely diced red onion, and diced cilantro into a medium bowl.
- Add Lime Juice and Salt: Squeeze the juice of one small lime over the fruit and vegetable mixture, then add ¼ teaspoon of salt. Stir gently to combine all ingredients evenly without mashing the avocado.
- Taste and Adjust Seasoning: Taste the salsa and add additional salt if necessary to enhance flavors.
- Garnish and Serve: Garnish the salsa with extra cilantro leaves. Serve immediately with multigrain pita chips for dipping, or use as a fresh topping for salmon, fish tacos, or shrimp.
Notes
- For a spicier salsa, leave some jalapeno seeds in or add extra jalapeno.
- To keep the avocado from browning, prepare just before serving or squeeze additional lime juice over the salsa and cover tightly.
- Double the recipe to serve a larger crowd (10-12 people).
- This salsa is best enjoyed fresh but can be refrigerated up to 1 day.
