Ingredients

Rice and Base

  • 1 red bell pepper, seeded and finely diced
  • 1 yellow or orange bell pepper, seeded and finely diced
  • 3 cloves garlic, minced
  • 1 cup peas, frozen or fresh

Additional Ingredients

  • 1/2 cup golden raisins
  • Salt and freshly ground pepper, to taste
  • Optional: 1 bay leaf
  • 1/3 cup chopped parsley
  • 2 green onions, chopped

Instructions

  1. Rinse the Rice: Place the rice in a fine mesh sieve and rinse under cold running water until the water runs clear to remove excess starch. Set it aside to drain and dry.
  2. Sauté Aromatics and Vegetables: Heat the vegetable oil and butter in a large pot over medium heat. Once the butter has melted, add the minced onion and sauté for 2 minutes until translucent. Add the diced carrot and both bell peppers, cooking for another 2-3 minutes until they start to soften. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add Peas and Raisins: Mix in the peas and golden raisins to the sautéed vegetables, combining well for a burst of sweetness and texture.
  4. Incorporate the Rice: Stir the drained rice into the pot with the vegetables, sautéing for 2 minutes to lightly toast the rice and blend flavors. Season with salt and freshly ground pepper to taste.
  5. Add Hot Water and Bay Leaf: Pour the hot water over the rice mixture, stirring well to incorporate. Taste the water to adjust seasoning if needed. Add the optional bay leaf for added aroma, then bring the mixture to a boil.
  6. Simmer the Rice: Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for 15 minutes, allowing the rice to absorb the liquid fully.
