Salad

  • 8-10 cups spring mix
  • 1 large Pink Lady or Honeycrisp apple, cored and thinly sliced
  • 1/4 cup thinly sliced red onion
  • 1/4 cup diced celery
  • 1/3 cup goat cheese
  • 1/3 cup dried cranberries or dried tart cherries
  • 1/3 cup candied pecans

Chicken

  • 1 tablespoon avocado or olive oil
  • 1 pound boneless skinless chicken breast
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper

Instructions

  1. Make the Dressing: Add all hot honey dressing ingredients—olive oil, whole milk yogurt, apple cider vinegar, hot honey, garlic cloves, whole grain Dijon mustard, lemon juice, salt, and pepper—to a blender. Blend until the mixture is smooth, creamy, and well combined. Set aside.
  2. Prepare the Salad: In a large mixing bowl, add the spring mix greens. Top the greens with thinly sliced apples, red onions, diced celery, goat cheese crumbles, dried cranberries or tart cherries, and candied pecans. Gently toss if desired or leave layered for serving.
  3. Season the Chicken: Split the chicken breasts in half lengthwise to create thinner cutlets for even cooking. Place the chicken in a large bowl and sprinkle with salt, garlic powder, onion powder, paprika, and black pepper. Toss well to coat the chicken evenly with the seasoning.
