Ingredients
Wet Ingredients
- ¾ cup granulated sugar
- ¼ cup unsalted butter, softened
- 1 egg
- ½ cup milk
- 1 teaspoon vanilla extract
Dry Ingredients
- 1½ cups self-rising flour
Fruit and Topping
- 2-3 Granny Smith apples, peeled, cored, and diced small
- ⅓ cup dark brown sugar, firmly packed
- 1½ teaspoons ground cinnamon
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and prepare a 10-inch (25 cm) cake pan by spraying it with nonstick cooking spray to ensure easy removal of the cake later.
- Prepare the Batter: In a stand mixer, beat together the granulated sugar, softened butter, and egg until the mixture is well combined and smooth. Then, blend in the milk, vanilla extract, self-rising flour, and the diced Granny Smith apples until just mixed to form the batter.
- Assemble the Cake: Pour the batter evenly into the prepared cake pan. Spread the batter smoothly with a spatula. Sprinkle the dark brown sugar and ground cinnamon evenly over the top surface. Use a toothpick or skewer to gently swirl the brown sugar and cinnamon into the batter creating a marbled effect.
- Bake: Place the pan in the preheated oven and bake for approximately 35 minutes, or until a toothpick inserted into the center of the cake comes out clean, indicating that it is fully cooked.
- Cool and Serve: Remove the cake from the oven and transfer it to a wire rack to cool completely. Once cooled, cut into 8 servings and enjoy.
Notes
- Using Granny Smith apples adds a tart flavor that balances the sweetness of the cake well, but you can swap in other firm apples if desired.
- If you don’t have self-rising flour, substitute with all-purpose flour plus 1½ teaspoons baking powder and ¼ teaspoon salt.
- The swirling of brown sugar and cinnamon on top creates a delightful caramelized layer after baking—be gentle to avoid mixing it fully into the batter.
- This coffee cake is best enjoyed fresh on the day of baking but can be stored covered at room temperature for up to 2 days.
