This Apple Chicken with Cider Mustard Sauce is a savory and slightly sweet dish featuring crispy skin-on chicken thighs braised with caramelized sweet apples in a tangy apple cider and whole grain mustard sauce. Perfectly cooked in an oven-proof skillet, the recipe balances bold flavors with fresh thyme garnish for a comforting and elegant meal that’s easy to prepare in under an hour.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

Chicken and Seasoning

  • 1 tbsp olive oil
  • 6 bone-in skin-on chicken thighs, patted dry
  • 1 tsp sea salt or kosher salt
  • 1 tsp cracked black pepper

Apple and Sauce

  • 2 sweet apples (Gala, Fuji, or Honeycrisp), thinly sliced
  • 1 tbsp apple cider vinegar
  • 2 tsp whole grain mustard
  • 1 cup apple cider
  • ½ cup chicken broth
  • 1 sprig fresh thyme, plus more for garnish

Instructions

  1. Preheat Oven: Heat your oven to 375°F to prepare for the final braising step.
  2. Sear Chicken: In an oven-proof skillet (such as cast iron), heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Place the chicken skin side down and cook until the skin is browned and easily releases from the pan, about 8-10 minutes. Flip the chicken and cook skin side up for 1 minute, then remove and set aside.
  3. Caramelize Apples: Add the thinly sliced apples to the same skillet and sauté in the rendered chicken fat, stirring occasionally, until the apples slightly caramelize, about 2-3 minutes.
  4. Deglaze and Prepare Sauce: Pour in the apple cider vinegar to deglaze the pan, scraping up any browned bits from the bottom. Stir in the whole grain mustard, apple cider, and chicken broth until well combined.
  5. Braise Chicken: Nestle the seared chicken thighs back into the skillet among the apple slices. Place the skillet in the preheated oven and braise until the chicken is cooked through and reaches an internal temperature of 165°F, about 20-25 minutes depending on size.
  6. Serve: Plate the chicken and spoon the caramelized apple slices and cider mustard sauce over the top. Garnish with fresh thyme sprigs and serve immediately for best flavor.

Notes

  • Use an oven-proof skillet to easily transfer from stovetop to oven.
  • Make sure to pat the chicken dry before searing to achieve crispy skin.
  • The type of apple used can influence sweetness and texture; Gala, Fuji, or Honeycrisp are preferred for their balance of sweetness and firmness.
  • Check chicken temperature with an instant-read thermometer to ensure safety and juiciness.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
