Ingredients
Crust
- 1 tube Refrigerated Sugar Cookie Dough (16.5 oz)
Filling
- 8 oz Cream Cheese (softened)
- 2/3 cup Sugar
- 1 teaspoon Vanilla Extract
- 8 oz Whipped Topping (thawed)
Topping
- 12 oz Fresh Raspberries (3 to 4 cups)
- 1 dry pint Fresh Blueberries (about 2 cups)
- Optional: 1 slice reserved cookie dough cut into star shape
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the cookie crust.
- Prepare Cookie Dough: Open the tube of refrigerated sugar cookie dough and slice it into 1/4 inch thick pieces.
- Form Crust: Lightly grease a 12 inch pizza pan. Arrange the cookie dough slices evenly on the pan and press them together to form a solid crust layer. Optionally, reserve one slice of dough to bake separately and cut out a star shape later.
- Bake Crust: Bake the cookie crust for 11-12 minutes or until it turns lightly golden brown. Once done, remove from oven and allow it to cool completely. While baking, wash and dry the fresh berries.
- Make Cream Cheese Filling: In a bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy. Gradually beat in half of the thawed whipped topping, then gently fold in the rest to keep the filling light and fluffy.
- Spread Filling: Scoop slightly less than half of the cream cheese mixture onto the cooled cookie crust and spread it evenly all the way to the edges.
- Arrange Blueberries: Use the fresh blueberries to create the blue field on the upper left portion of the ‘pizza,’ outlining the area and filling it in to resemble the flag’s blue canton. Place the star cookie (if made) on top of the blueberry section as the star representing the states.
- Create Red Stripes: Using fresh raspberries, form seven horizontal stripes across the remaining part of the crust to mimic the red stripes of the American flag.
- Pipe White Stripes: Fill in the gaps between the raspberry stripes by piping or spreading the remaining cream cheese mixture to form white stripes, completing the flag pattern.
- Chill: Refrigerate the completed fruit pizza until ready to serve to allow the filling to set and flavors to meld.
Notes
- Be sure to cool the cookie crust completely before adding the cream cheese filling to prevent melting.
- For a decorative touch, use a small star-shaped cookie cutter on reserved dough and bake separately for the blue star.
- This dessert is best served chilled but should be brought to room temperature briefly before serving if stored in the fridge for several hours.
- Feel free to substitute other fresh berries or fruits to customize the look and flavor.
- Use full-fat cream cheese and whipped topping for best texture and flavor.
