Ingredients

  • 1 ½ cups (160g) cauliflower rice

  • 1 cup (149g) baby tomatoes (halved)
  • 1 ½ cups (195g) chopped kale
  • 4 bell peppers (deseeded and hollowed out)

Seasonings & Toppings

  • Salt and pepper (to taste)
  • 1 tablespoon taco seasoning
  • ½ cup (169g) shredded cheese
  • Chopped parsley or chives (for garnish)

Instructions

  1. Preheat Air Fryer: Preheat your air fryer to 360°F (180°C) and lightly spray the basket to prevent sticking.
  2. Sauté Onions and Brown Beef: In a skillet, sauté the finely diced red onion for a few minutes until translucent. Add the ground beef and cook, stirring occasionally, until browned. Drain any excess grease and add taco seasoning, salt, and pepper to taste.
  3. Add Vegetables: Mix in the halved baby tomatoes, cauliflower rice, and chopped kale with the browned beef. Stir-fry the mixture for 4–6 minutes until the vegetables soften. Drain any excess moisture from the mixture to avoid soggy peppers.
  4. Stuff the Peppers: Fill each hollowed-out bell pepper with the prepared beef and vegetable mixture, packing it gently.
  5. Air Fry the Stuffed Peppers: Place the stuffed peppers upright in the air fryer basket. Cook for 10–12 minutes or until the peppers are softened to your preferred texture.
  6. Add Cheese and Finish Cooking: Sprinkle shredded cheese on top of each pepper and air fry for an additional 2–3 minutes until the cheese melts beautifully.
  7. Serve and Garnish: Remove the peppers from the air fryer and garnish with chopped parsley or chives. Serve warm for a satisfying meal.
