Instructions
- Preheat air fryer: Preheat your air fryer to 400°F to ensure it reaches the right temperature for perfectly crisp burritos.
- Combine filling ingredients: In a large bowl, mix together shredded rotisserie chicken, cream cheese, shredded cheddar, black beans, drained corn, diced tomatoes, taco seasoning, and fresh pico de gallo until well combined and creamy.
- Assemble burritos: Place one flour tortilla on a flat surface and scoop about 1 cup of the filling mixture into the center. Fold in the sides to contain the filling, then roll tightly from the bottom up to form a secure burrito.
- Prepare for air frying: Spray the exterior of each burrito generously with cooking spray to promote browning and crispness during air frying.
- Air fry first side: Place the burritos in the preheated air fryer basket in a single layer without overcrowding. Cook for 5 minutes at 400°F to crisp the bottom side.
- Flip and spray: Carefully flip each burrito over, then spray the newly exposed side with cooking spray to help it crisp as well.
- Air fry second side: Continue cooking for an additional 5 minutes at 400°F until the burritos are golden and heated through.
- Serve: Remove the burritos from the air fryer and serve warm, garnished with extra pico de gallo and a dollop of sour cream for a fresh and creamy finish.
