Breading Mixture
- 1 cup panko breadcrumbs
- 1/2 cup sweetened desiccated coconut flakes

- 2 eggs
- 2 teaspoons sugar

Instructions
- Prepare the breading mixture: In a bowl, combine the panko breadcrumbs and sweetened desiccated coconut flakes. Mix them well and set aside to be used for coating the shrimp.
- Mix the egg wash: In a separate bowl, beat the eggs together with the sugar until the mixture is fully combined and smooth. Set aside for dipping.
- Coat the shrimp: Pat the jumbo shrimp dry with paper towels to remove excess moisture. Dip each shrimp into the egg mixture ensuring it is fully coated. Then roll the shrimp in the panko-coconut mixture, pressing lightly so it adheres well. Shake off any excess crumbs. Repeat the dipping and coating once more for a double layer of crispy coating.
- Arrange shrimp in air fryer: Place the coated shrimp in a single layer inside the air fryer basket, ensuring they do not overlap to allow even cooking.
- Air fry the shrimp: Set the air fryer temperature to 375°F (190°C). Air fry the shrimp for 5 minutes, then carefully flip each shrimp over and continue air frying for an additional 3 minutes until they are golden brown and crispy.
- Serve: Remove the shrimp from the air fryer and serve immediately with chili sauce or your favorite dipping sauce for a delicious appetizer or snack.
Notes
- Make sure to dry the shrimp well before coating to help the breading stick better.
- For a spicier kick, add cayenne pepper or chili powder to the breadcrumb mixture.
