This Air Fryer Chicken Fajitas recipe is a quick and flavorful way to enjoy a classic Tex-Mex dish with tender chicken strips and colorful bell peppers cooked to perfection in your air fryer. Seasoned with a blend of chili powder, cumin, smoked paprika, and garlic, these fajitas come together effortlessly in just 35 minutes, making them a perfect weeknight meal that’s juicy, vibrant, and full of zest.

  • Total Time: 35 minutes
  • Yield: 6 servings

Ingredients

Protein

  • 2 pounds boneless skinless chicken breasts, cut into thin strips

Vegetables

  • 3 medium bell peppers, cut into strips
  • 1 medium red onion, thinly sliced

Seasonings & Liquids

  • 3 tablespoons olive oil, plus more for greasing
  • 1 tablespoon white wine vinegar
  • 4 teaspoons chili powder
  • 2 teaspoons kosher salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons lime juice (about 1 lime)
  • ¼ cup chopped cilantro

Instructions

  1. Preheat the air fryer: Set your air fryer to 390℉ and allow it to come to temperature for best cooking results.
  2. Prepare the chicken and vegetables: In a large bowl, combine the chicken strips, bell peppers, red onion, olive oil, white wine vinegar, chili powder, kosher salt, onion powder, garlic powder, cumin, smoked paprika, and black pepper. Toss gently but thoroughly to ensure all ingredients are evenly coated with the seasoning mixture.
  3. Air fry the first batch: Place half of the seasoned chicken and vegetables into the greased air fryer basket. Cook for 11 minutes, shaking the basket halfway through the cooking time to promote even cooking and browning.
  4. Keep the first batch warm: Once cooked, transfer the chicken and vegetables to a serving platter or bowl, covering it loosely with aluminum foil to retain heat while you cook the remaining portion.
  5. Air fry the remaining fajitas: Repeat the cooking process with the rest of the chicken and vegetables, air frying for the same duration until the chicken is fully cooked and vegetables are tender.
  6. Finish and serve: Once all fajitas are cooked, drizzle lime juice over the top and sprinkle with chopped cilantro. Serve immediately with warm corn or flour tortillas and your favorite fajita toppings like guacamole, sour cream, and salsa.

Notes

  • Cut chicken breasts into uniform thin strips to ensure even cooking.
  • Shaking the basket halfway through promotes even browning and prevents sticking.
  • Use a meat thermometer to check chicken reaches an internal temperature of 165℉ (74℃) for food safety.
  • If air fryer basket is small, cook in batches to avoid overcrowding and ensure crispness.
  • Customize fajita toppings to your liking with options such as shredded cheese, diced tomatoes, or jalapeños.
  • Leftover fajitas can be refrigerated for up to 3 days and reheated in the air fryer or stovetop.
