A simple and flavorful recipe for roasted Brussels sprouts tossed with a creamy tahini, thyme, and lemon dressing, topped with sweet Medjool dates. This easy 5-ingredient dish is perfect as a nutritious side or light vegetarian meal, showcasing a perfect balance of savory, tangy, and sweet flavors.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Brussels Sprouts

  • 1 lb. Brussels sprouts, trimmed and halved
  • 2 Tbsp. extra-virgin olive oil (or avocado oil)
  • 1/2 tsp. kosher salt
  • 1/4 tsp. cracked black pepper

Tahini-Thyme Dressing

  • 2 Tbsp. tahini
  • 1/2 tsp. lemon zest
  • 2 tsp. fresh lemon juice (from 1 lemon)
  • 1 tsp. fresh thyme leaves
  • Pinch of salt and black pepper
  • 2 Tbsp. cold water

Topping

  • 2 pitted Medjool dates, finely chopped
  • Olive oil, for drizzling (optional)
  • Black pepper, for finishing (optional)

Instructions

  1. Preheat and Roast: Preheat your oven to 450°F. Toss the trimmed and halved Brussels sprouts with olive oil, 1/2 tsp kosher salt, and 1/4 tsp cracked black pepper. Arrange them cut side-down on a large baking sheet without overlapping to ensure even roasting. Roast for 15 minutes until the Brussels sprouts are golden brown and tender. Transfer them to a bowl or serving platter.
  2. Prepare Dressing: In a glass jar or mixing bowl, combine tahini, lemon zest, lemon juice, fresh thyme leaves, and a pinch of salt and black pepper. Mix thoroughly and gradually whisk in 2 tablespoons of cold water until the dressing is smooth, creamy, and pourable.
  3. Assemble and Serve: Drizzle the tahini-thyme dressing evenly over the roasted Brussels sprouts. Scatter the finely chopped Medjool dates over the top for a touch of sweetness. Finish with an optional drizzle of olive oil and a few grinds of black pepper to taste. Serve immediately for best flavor and texture.

Notes

  • Ensure Brussels sprouts are arranged in a single layer cut side down for optimal browning and crispiness.
  • Medjool dates add a pleasant sweetness; substitute with dried apricots or raisins if unavailable.
  • Adjust the consistency of the tahini dressing by adding more or less cold water as needed.
  • For a nut-free version, substitute tahini with sunflower seed butter.
  • This dish is best served fresh but can be stored refrigerated for up to 2 days.
