A simple and hearty 5-ingredient baked gnocchi dish featuring tender broccoli florets and creamy cannellini beans simmered in savory tomato sauce, topped with melted mozzarella cheese for a comforting, easy weeknight meal.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Vegetables

  • 4-5 cups broccoli florets

Pasta & Beans

  • 1 (16 oz) package gnocchi
  • 1 (15 oz) can cannellini beans, drained and rinsed

Sauces & Dairy

  • 1 (24 oz) jar tomato sauce
  • 1 3/4 cups grated mozzarella cheese, divided

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat and Boil Vegetables: Preheat your oven to 425 degrees Fahrenheit. Bring a large pot of salted water to a rolling boil. Add the broccoli florets and blanch for about 2 minutes to soften slightly, then add the gnocchi and cook together for an additional 1 minute until the gnocchi float to the surface.
  2. Combine Ingredients: Drain the broccoli and gnocchi thoroughly, then return them to the pot. Add the drained cannellini beans, tomato sauce, 1 cup of the shredded mozzarella cheese, salt, black pepper, and any extra seasonings you prefer. Stir well to combine all ingredients evenly.
  3. Assemble in Baking Dish: Pour the mixture into a large baking dish, spreading it evenly with a spoon. Sprinkle the remaining 3/4 cup mozzarella cheese evenly over the top of the mixture to create a cheesy crust.
  4. Bake Covered: Optionally cover the baking dish with aluminum foil to prevent excessive browning. Place the dish in the oven and bake for 15 minutes, allowing the flavors to meld and ingredients to heat through.
  5. Bake Uncovered and Finish: Remove the foil and bake uncovered for an additional 5-7 minutes or until the cheese on top is fully melted, bubbly, and slightly golden.
  6. Cool and Serve: Allow the bake to cool for a few minutes before serving to let it set slightly. Enjoy a warm, satisfying meal packed with vegetables, beans, and cheesy goodness.

Notes

  • You can add Italian seasoning or crushed red pepper flakes for extra flavor.
  • Use fresh mozzarella if available for a creamier texture.
  • For a vegan version, substitute cheese with a plant-based alternative and ensure the tomato sauce is free of animal products.
  • To make it gluten-free, verify the gnocchi package is labeled gluten-free.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
