Ingredients
Brownie Base
- 1 cup pitted dates (softened)
- ½ cup creamy all natural peanut butter
- ½ cup cocoa powder
- 2 tbsp pure maple syrup (or honey)
Topping
- ½ cup creamy all natural peanut butter
- ½ cup dark chocolate chips (melted)
Instructions
- Prepare the pan: Line an 8 inch by 8 inch baking pan with parchment paper to prevent sticking and make removal easier.
- Soften the dates: Place the pitted dates in hot water for at least 10 minutes to soften them. Drain thoroughly after soaking.
- Make the brownie base: In a food processor or blender, combine the softened dates, ½ cup peanut butter, cocoa powder, and maple syrup. Process until the mixture is smooth and well combined.
- Press mixture into pan: Transfer the brownie base mixture into the prepared pan and press it down evenly into a compact layer.
- Prepare the topping: In a bowl, mix together ½ cup peanut butter and the melted dark chocolate chips until the topping is creamy and smooth.
- Add the topping: Pour the peanut butter and chocolate mixture over the pressed brownie base, spreading it evenly with a spatula.
- Chill to set: Place the pan in the refrigerator for at least one hour to allow the brownies to firm up.
- Slicing and serving: Once chilled and set, remove the brownies from the fridge, slice into 9 servings, and serve.
