Ingredients
Steak and Marinade
- 500 g sirloin steak
- 2 tablespoons Cajun spice mix
- 1 lime (juice only)
- 60 ml olive oil
Vegetables
- 1 red pepper, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 red onion, thinly sliced
To Serve
- 1 avocado, sliced
- 150 g sour cream or Greek yogurt
- 1 bunch coriander, chopped
- 8-10 small flour tortillas or 5 large flour tortillas
Instructions
- Marinate the Steak: Remove the sirloin from its packaging and place it in a shallow dish. Combine the Cajun spice mix, lime juice, and olive oil, then pour this marinade over the steak, making sure both sides are well coated. Allow it to marinate for at least 15 minutes to impart flavor, or up to 24 hours for a deeper taste.
- Prepare the Vegetables: While the steak is marinating, thinly slice the red pepper, yellow pepper, and red onion into long strips. Set these aside until ready to cook.
- Cook the Steak: Heat a nonstick or cast iron skillet over high heat until very hot. Remove the steak from the marinade and sear it in the pan for about 4-5 minutes per side, or until it reaches your preferred level of doneness. Remove the steak from the pan and let it rest to retain juices.
- Cook the Vegetables: In the same pan, add the sliced onions and cook over medium-high heat until softened and starting to brown, about 5 minutes. Add the sliced peppers and continue cooking for another 10 minutes. Pour in any remaining marinade and bring it to a boil, then reduce heat to simmer until it thickens into a sauce, approximately 3 minutes. Remove from heat.
- Slice the Steak: Slice the rested steak thinly across the grain. Return the sliced steak to the pan with the cooked peppers and onions, tossing everything together to combine the flavors.
- Assemble the Fajitas: Warm the tortillas in a dry pan or briefly over an open flame until pliable. Spread about a tablespoon of sour cream or Greek yogurt on each tortilla, then top with the steak and vegetable mixture. Garnish with chopped coriander and serve with sliced avocado and extra lime wedges for squeezing on top.
Notes
- Marinating the steak longer (up to 24 hours) allows the flavors to penetrate more deeply.
- Use a cast iron skillet or heavy nonstick pan to get a good sear on the steak.
- Adjust the cooking time depending on steak thickness and preferred doneness.
- Warm tortillas just before serving to keep them soft and easy to fold.
- Optional toppings include shredded cheese, salsa, or jalapeños for extra heat.
