Ingredients
Gnocchi and Vegetables
- 500 g shelf-stable gnocchi
- 180 g broccoli, cut into florets

- 1 tablespoon olive oil
- 250 ml vegetable stock (1 stock cube dissolved in 250 ml boiling water)
- 125 g cream cheese
- 200 g grated mozzarella, divided
- Salt and pepper to taste
Instructions
- Blanch the Broccoli: Bring a pot of salted water to a boil. Add the broccoli florets and blanch for 3-5 minutes until tender but still crisp. Drain and rinse under cold water to stop the cooking, then set aside.
- Prepare the Gnocchi: In an oven-safe dish, heat the olive oil over medium heat until shimmering, about 3 minutes. Add the gnocchi and toss to coat in the oil, cooking until golden and slightly crispy, about 2 minutes.
- Make the Sauce: Pour in the vegetable stock and bring to a gentle simmer. Stir in the cream cheese until melted and fully combined with the stock, creating a creamy sauce. Mix in half of the grated mozzarella and stir until melted through. Taste and adjust seasoning with salt and pepper as needed.
- Combine Ingredients: Add the blanched broccoli to the pan and stir gently to coat with the creamy sauce. Evenly scatter the remaining mozzarella over the top.
- Grill: Place the oven-safe dish under the grill (broiler) for about 5 minutes, or until the cheese is melted, bubbly, and golden brown at the edges.
- Serve: Optionally, sprinkle with parmesan cheese before serving for extra flavor and serve immediately while hot.
Notes
- Use shelf-stable gnocchi for convenience, but fresh gnocchi can also be used.
- Adjust the amount of cheese to suit your preference for creaminess.
- To make this dish vegetarian friendly, ensure the vegetable stock cube contains no animal derivatives.
- Blanching broccoli helps retain its vibrant color and crisp texture.
- If you don’t have a grill, you may finish the dish in a hot oven at 200°C (400°F) to melt and brown the cheese.
