Ingredients
Wet Ingredients
- 3 eggs
- 1 cup Greek yogurt
- 1 teaspoon vanilla extract or vanilla sugar (optional)
Dry Ingredients
- ⅓ cup flour
- 2 tablespoons sugar
Instructions
- Preheat the oven: Set your oven to 350°F (180°C) to warm up while you prepare the cake batter.
- Mix the wet ingredients: In a mixing bowl, whisk together the eggs and sugar until the mixture becomes lightly foamy. Then add the Greek yogurt and combine thoroughly.
- Add the flour: Gradually sift the flour into the wet mixture, stirring gently until the batter is smooth and free of lumps.
- Add vanilla: If using vanilla extract or vanilla sugar, mix it in now to infuse additional flavor.
- Bake: Pour the batter into a greased or lined baking pan. Bake in the preheated oven for 30 to 35 minutes, or until the cake turns golden and springs back when gently pressed in the center.
- Cool and serve: Allow the cake to cool slightly in the pan before slicing and serving. Enjoy it as is or with your favorite toppings.
Notes
- Using Greek yogurt adds moisture and a slight tang, but you can substitute plain yogurt if needed.
- Greasing or lining the pan ensures easy cake removal.
- You can add lemon zest or berries for extra flavor variations.
- If you prefer a sweeter cake, increase sugar slightly according to taste.
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days.
