Dressing
- ½ cup grated English cucumber
- 1 cup plain Greek yogurt
- 1 tablespoon extra virgin olive oil
- 1 tablespoon freshly squeezed lemon juice

- 1 ½ tablespoons fresh dill, chopped
- 1 tablespoon fresh mint, chopped

Salad
- 3 cups rotisserie chicken, finely chopped
- 1 cup English cucumber, diced
- 3 tablespoons pitted kalamata olives, finely chopped
- 3 tablespoons red onion, finely chopped
- ¼ cup + 2 tablespoons crumbled feta cheese
Instructions
- Grate Cucumber and Remove Moisture: Grate a cucumber using the larger holes on your grater. To remove excess moisture, place the grated cucumber onto 2 to 3 layers of paper towels and squeeze well to avoid watery dressing.
- Prepare Tzatziki Dressing: In a large bowl, add the Greek yogurt. Slowly whisk in the olive oil until fully incorporated. Stir in the lemon juice, grated cucumber, garlic powder, parsley, dill, mint, kosher salt, and black pepper. Set this flavorful dressing aside while prepping the other ingredients.
- Prep Onion: Finely chop the red onion and place it in a small fine mesh strainer. Rinse it under very hot water for 45 seconds, then rinse again with cold water to mellow out the sharpness and reduce bite.
- Prepare Fresh Cucumber: Slice your cucumber in half lengthwise and use a spoon to scoop out the seeds. Then dice the cucumber into ¼ to ½-inch pieces for texture in the salad.
- Combine Salad Ingredients: Add the finely chopped rotisserie chicken, diced cucumber, chopped kalamata olives, prepared red onion, and crumbled feta cheese to the bowl containing the tzatziki dressing. Use a rubber spatula to gently stir and combine everything until the chicken and vegetables are fully coated with the tzatziki sauce.
- Serve and Garnish: Before serving, garnish with additional crumbled feta and a sprinkle of chopped fresh herbs if desired. This salad can be enjoyed on its own, served with crackers or fresh vegetables, or used as a filling for sandwiches.
