Ingredients
Chicken
- 3 large organic chicken breasts, trimmed, tenderized, and sliced in halves
Breading
- 1.5 cups Simple Mills crackers (or your favorite gluten-free or almond flour crackers)
- 2 tablespoons ground flaxseed
- 1 teaspoon dried rosemary
- 1/4 teaspoon pink salt
Other
- 1 pasture-raised egg
- 3 tablespoons avocado or coconut oil
Instructions
- Prepare the Breading: In a food processor or blender, combine the gluten-free crackers, ground flaxseed, dried rosemary, and pink salt. Pulse until the mixture reaches a coarse flour-like consistency. If you don’t have a food processor or blender, place crackers in a resealable bag and crush with a meat tenderizer or flat glass until finely ground. Transfer this mixture to a deep dish bowl.
- Whisk the Egg: In a separate deep dish bowl, whisk the pasture-raised egg to create an egg wash.
- Prepare Chicken: Trim and tenderize each chicken breast half by pounding them to an even thickness to ensure uniform cooking.
- Assemble Chicken Breading: Using tongs or a fork, dip each piece of chicken into the egg wash, coating it fully. Let any excess egg drip off before transferring the chicken to the cracker breading mixture. Press to coat thoroughly on all sides, then place the breaded chicken on a clean plate. Repeat until all chicken pieces are coated.
- Cook the Chicken: Heat a large skillet over medium heat and add the avocado or coconut oil. Once hot, place the breaded chicken pieces in the skillet. Cook for 4-6 minutes on each side or until the crust is golden brown. If needed, reduce the heat and cover the skillet to allow the chicken to cook through evenly.
- Serve: Once cooked, remove the chicken from the skillet and let it rest for a few minutes before serving. Enjoy your crispy, gluten-free chicken immediately.
- Storage: Store any leftovers in an airtight container in the refrigerator for up to 3-4 days.
Notes
- You can substitute any gluten-free or almond flour crackers for Simple Mills crackers.
- If a food processor or blender is unavailable, use a resealable bag and a meat tenderizer to crush the crackers.
- Covering the skillet during cooking helps ensure the chicken cooks evenly without burning the crust.
- Letting the chicken rest before serving helps retain juiciness.
- Store leftovers properly to maintain freshness.
