Ingredients
Chicken and Broccoli Stir Fry
- 2 tablespoons olive oil
- 2 boneless skinless chicken breasts, cubed
- 2 cups broccoli florets
- 1 teaspoon toasted sesame oil
- Green onions for garnish
Stir Fry Sauce
- ⅓ cup reduced sodium soy sauce
- 3 tablespoons brown sugar or honey
- ⅔ cup water
- 2 tablespoons white vinegar
- 2 tablespoons cornstarch
- 2 garlic cloves, minced
- ½ teaspoon ground ginger
- ½ teaspoon red pepper flakes or to taste
Instructions
- Cook the Chicken: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the cubed chicken breasts, season with salt and pepper, and cook until browned and mostly cooked through, about 5 minutes.
- Prepare Stir Fry Sauce: While the chicken is cooking, whisk together the soy sauce, brown sugar or honey, water, white vinegar, cornstarch, minced garlic, ground ginger, and red pepper flakes in a bowl and set aside.
- Cook Broccoli: Once the chicken is browned, add the remaining 1 tablespoon olive oil to the skillet along with the broccoli florets. Cook for 3 to 4 minutes or until the broccoli is bright green and tender-crisp.
- Combine and Thicken Sauce: Stir in the prepared stir fry sauce to the skillet with chicken and broccoli. Cook for another minute, stirring constantly, until the sauce has thickened and coats the ingredients well.
- Finish and Serve: Remove the skillet from heat, stir in the toasted sesame oil for added aroma and flavor. Garnish with sliced green onions before serving.
Notes
- Use reduced sodium soy sauce to control salt content.
- Adjust the red pepper flakes to your desired spice level.
- Brown sugar can be substituted with honey for a natural sweetener.
- Serve over steamed rice or noodles for a complete meal.
