Zucchini Fritters
- 1 pound zucchinis, grated (approx. 3 medium zucchinis)
- ½ teaspoon kosher salt, or more to taste
- 1 large egg, whisked
- ¼ cup all-purpose flour, or gluten free flour
- ½ cup Parmesan cheese, freshly grated
- ¼ teaspoon garlic powder
- ¼ cup green onion, finely chopped
- ¼ cup dill, finely chopped
- ¼ cup avocado oil, or more for frying
Instructions
- Prepare the Zucchini: Grate the zucchinis and place them in a clean kitchen towel or cheesecloth. Squeeze out as much excess moisture as possible to ensure the fritters are not soggy.
- Mix Ingredients: In a large bowl, combine the grated zucchini, kosher salt, whisked egg, flour, freshly grated Parmesan cheese, garlic powder, chopped green onion, and chopped dill. Stir well until all ingredients are evenly incorporated.
- Form Fritters: Using your hands or a spoon, form the mixture into small patties about 2-3 inches in diameter and approximately ½ inch thick.
- Heat Oil: Heat avocado oil in a large skillet over medium heat. Ensure the oil is hot enough but not smoking before adding the fritters.
- Fry Fritters: Place the patties carefully in the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crisp.
- Drain Excess Oil: Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
- Serve Warm: Serve the zucchini fritters warm as an appetizer or side dish, optionally garnished with additional herbs or a dollop of sour cream or yogurt.
