This refreshing Yogurt Panna Cotta with Macerated Berries is a light and creamy dessert that combines the smooth texture of Greek yogurt panna cotta with the vibrant sweetness of mixed berries. Perfectly balanced with a hint of vanilla and gently sweetened, this dessert is a delightful treat that requires minimal hands-on time and is ideal for serving at gatherings or as a wholesome finish to any meal.

  • Total Time: 6 hours 25 minutes
  • Yield: 8 servings

Ingredients

Panna Cotta

  • Nonstick spray, as needed
  • 3 tablespoons 1% fat milk
  • 1 1/4 cups 1% fat milk
  • 1/2 tablespoon unflavored gelatin
  • 6 tablespoons sugar, divided
  • 1 cup Stonyfield plain 0% Greek yogurt
  • 1 teaspoon vanilla extract

Macerated Berries

  • 4 cups mixed berries (blackberries, raspberries, and sliced strawberries)
  • 1 tablespoon sugar
  • 8 small mint leaves (for garnish)

Instructions

  1. Prepare Ramekins: Spray 8 (4-ounce) ramekins with nonstick spray to ensure the panna cotta can be easily unmolded later.
  2. Bloom Gelatin: Pour 3 tablespoons of milk into a small bowl, sprinkle the unflavored gelatin evenly over the surface, and let it stand for 10 minutes to bloom.
  3. Heat Milk and Sugar: While the gelatin blooms, heat the remaining 1 1/4 cups of milk and 5 tablespoons of sugar in a small saucepan over medium heat. Stir occasionally until the sugar dissolves and the mixture is warm but not boiling.
  4. Dissolve Gelatin: Add the bloomed gelatin mixture to the warm milk and sugar, stirring continuously until the gelatin and sugar are completely dissolved. Avoid boiling to maintain gelatin’s setting properties.
  5. Combine Yogurt and Vanilla: Remove the saucepan from heat and let it cool slightly. Whisk in the Greek yogurt and vanilla extract until the mixture is smooth and well combined.
  6. Chill Panna Cotta: Divide about 1/3 cup of the mixture equally among the prepared ramekins. Cover each with plastic wrap and chill in the refrigerator for at least 6 hours or overnight until firm.
  7. Prepare Macerated Berries: Approximately 30 minutes before serving, place the mixed berries in a medium bowl and sprinkle with the remaining 1 tablespoon of sugar. Stir occasionally with a rubber spatula until the berries release their juices and become juicy, for at least 10 minutes.
  8. Unmold and Serve: To serve, unmold each panna cotta onto small plates. Top each with 1/2 cup of the macerated berries.
  9. Garnish: Garnish each serving with a fresh mint leaf for a vibrant finish.

Notes

  • Ensure the milk and gelatin mixture is warm but not boiling to avoid affecting gelatin’s setting ability.
  • Using 0% Greek yogurt keeps the dessert light, but full-fat yogurt can be used for a creamier texture.
  • The dessert needs at least 6 hours or overnight chilling to properly set.
  • You can substitute mixed berries with any fresh seasonal berries.
  • For easier unmolding, briefly dip ramekins in warm water before inverting onto plates.
