Panna Cotta
- Nonstick spray, as needed
- 3 tablespoons 1% fat milk
- 1 1/4 cups 1% fat milk
- 1/2 tablespoon unflavored gelatin
- 6 tablespoons sugar, divided
- 1 cup Stonyfield plain 0% Greek yogurt
- 1 teaspoon vanilla extract
Macerated Berries
- 4 cups mixed berries (blackberries, raspberries, and sliced strawberries)
- 1 tablespoon sugar
- 8 small mint leaves (for garnish)
Instructions
- Prepare Ramekins: Spray 8 (4-ounce) ramekins with nonstick spray to ensure the panna cotta can be easily unmolded later.
- Bloom Gelatin: Pour 3 tablespoons of milk into a small bowl, sprinkle the unflavored gelatin evenly over the surface, and let it stand for 10 minutes to bloom.
- Heat Milk and Sugar: While the gelatin blooms, heat the remaining 1 1/4 cups of milk and 5 tablespoons of sugar in a small saucepan over medium heat. Stir occasionally until the sugar dissolves and the mixture is warm but not boiling.
- Dissolve Gelatin: Add the bloomed gelatin mixture to the warm milk and sugar, stirring continuously until the gelatin and sugar are completely dissolved. Avoid boiling to maintain gelatin’s setting properties.
- Combine Yogurt and Vanilla: Remove the saucepan from heat and let it cool slightly. Whisk in the Greek yogurt and vanilla extract until the mixture is smooth and well combined.
- Chill Panna Cotta: Divide about 1/3 cup of the mixture equally among the prepared ramekins. Cover each with plastic wrap and chill in the refrigerator for at least 6 hours or overnight until firm.
- Prepare Macerated Berries: Approximately 30 minutes before serving, place the mixed berries in a medium bowl and sprinkle with the remaining 1 tablespoon of sugar. Stir occasionally with a rubber spatula until the berries release their juices and become juicy, for at least 10 minutes.
- Unmold and Serve: To serve, unmold each panna cotta onto small plates. Top each with 1/2 cup of the macerated berries.
- Garnish: Garnish each serving with a fresh mint leaf for a vibrant finish.
Notes
- Ensure the milk and gelatin mixture is warm but not boiling to avoid affecting gelatin’s setting ability.
- Using 0% Greek yogurt keeps the dessert light, but full-fat yogurt can be used for a creamier texture.
- The dessert needs at least 6 hours or overnight chilling to properly set.
- You can substitute mixed berries with any fresh seasonal berries.
- For easier unmolding, briefly dip ramekins in warm water before inverting onto plates.
