Ingredients

1 pound ground beef (80-90% lean)

1 cup chopped yellow onion

1 packet chili seasoning mix

½ cup beef broth or water

1 can kidney beans, drained

½ bag Fritos corn chips

3 cups shredded cheese (Mexican blend or cheddar)

Optional Toppings: shredded lettuce, jalapeños, chopped tomatoes, sour cream, green onions, cilantro, guacamole

Instructions

  • Preheat Oven: Preheat oven to 375°F (190°C).

  • Cook the Beef: In a skillet over medium heat, brown ground beef and sauté onions for 6–8 minutes. Drain grease.

  • Season: Stir in chili seasoning and broth or water. Simmer 2–3 minutes until slightly thickened.

  • Add Beans: Stir in drained beans and remove from heat.

  • Assemble Casserole: In a 9×13-inch baking dish, layer half of the Fritos. Top with beef mixture, then cheese.

  • Bake: Bake uncovered for 15–20 minutes, until cheese is melted and bubbly.

  • Top and Serve: Top with remaining Fritos and desired toppings. Serve immediately.

Notes

Substitute ground turkey or chicken for a leaner option.

Add corn or black beans for variety.

For a crunch twist, try Doritos instead of Fritos.
