Instructions
- Preheat and prepare veggies: Preheat your oven to 375°F (190°C). In a food processor, combine the shallots, garlic cloves, and diced bell peppers. Pulse until the mixture is finely chopped.
- Squeeze out excess moisture: Transfer the processed vegetable mixture into a cheesecloth set over a bowl. Squeeze vigorously to remove as much water as possible, ensuring your kebabs won’t become soggy.
- Mix meat and seasonings: In a large mixing bowl, combine the ground chicken, squeezed vegetables, kosher salt, black pepper, paprika, dried oregano, and chopped parsley. Mix thoroughly to evenly distribute the flavors.
- Prepare the sheet pan: Lightly oil a large sheet pan to prevent sticking. Evenly spread out the meat mixture on the pan, pressing it down firmly into one smooth, even layer.
- Score the kebabs: Using a spatula or knife, score the meat into long, narrow rows. Then, create small horizontal indentations along each row to mimic the appearance of traditional grilled kebabs.
- Bake and broil: Place the sheet pan on the top rack of your oven. Bake for 20 minutes until the meat is cooked through. Finish by broiling for a few minutes to brown and crisp the top surface.
