Shaking Beef Marinade
- 400g Ribeye steak, cut into bite-sized cubes
- 5 tbsp soy sauce
- 5 tbsp oyster sauce
- 1 tbsp fish sauce
- 4 cloves garlic, minced
- 2 tsp sugar
- 2 tbsp meat velvet (cornstarch slurry for tenderizing)
- 2 tbsp water
Garlic Noodles Stir Fry
- 4 tbsp butter
- 6 cloves garlic, minced
- 2 servings egg noodles
- ½ tsp chicken powder
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- ½ tsp yum yum sauce
Vegetables and Stir Fry Oils
- Chopped bell peppers (red and green) – about 1 cup total
- ½ onion, sliced
- 4 tbsp oil, divided (2 tbsp for stir-frying beef, 2 tbsp for noodles and vegetables)
Instructions
- Prepare the Shaking Beef Marinade: In a bowl, combine the soy sauce, oyster sauce, fish sauce, minced garlic, sugar, meat velvet, and water. Mix well to create a thick marinade. Add the cubed ribeye steak and toss to coat evenly. Let it marinate for at least 20 minutes to allow the flavors to penetrate.
- Cook the Shaking Beef: Heat 2 tablespoons of oil in a large skillet or wok over high heat. Once hot, add the marinated beef cubes in a single layer. Stir-fry rapidly for about 3-5 minutes until the beef is browned and cooked to medium-rare or desired doneness. Remove beef from the pan and set aside to keep warm.
- Prepare the Garlic Noodles: Bring a pot of water to a boil and cook the egg noodles according to package instructions until al dente. Drain and set aside.
- Make the Garlic Butter Sauce: In the same skillet, add 4 tablespoons of butter and minced garlic. Sauté over medium heat until the garlic is fragrant and lightly golden, about 1-2 minutes. Be careful not to burn the garlic.
- Stir-Fry Vegetables: Add the remaining 2 tablespoons of oil to the skillet. Toss in the chopped bell peppers and sliced onion. Stir-fry for 2-3 minutes until the vegetables are slightly tender but still crisp.
- Combine Noodles and Sauce: Add the cooked noodles to the skillet with vegetables and garlic butter. Sprinkle the chicken powder, oyster sauce, soy sauce, and yum yum sauce over the noodles. Toss everything together thoroughly to coat the noodles evenly with the sauce and mix in the vegetables.
- Finish and Serve: Return the cooked shaking beef to the skillet with noodles and vegetables. Gently toss to combine and heat through for another minute. Serve hot immediately for best flavor and texture.
Notes
- Meat velvet is a cornstarch and water slurry used to tenderize meat. If unavailable, substitute with 1 tablespoon cornstarch mixed with water.
- Adjust soy and oyster sauce quantities to taste if you prefer a lighter or saltier flavor.
- Yum yum sauce is a creamy, slightly sweet Japanese-style sauce that adds depth. You can omit if unavailable or substitute with a mild chili mayo.
- For added freshness, garnish with chopped green onions or cilantro before serving.
- Cook beef in batches if your pan is small to avoid overcrowding and ensure proper searing.
- Use high heat when stir-frying to quickly cook ingredients while preserving texture and flavor.
