Fudge Base
- 320 g sweetened condensed coconut milk
- 125 g pistachio butter
- 250 g vegan white chocolate, chopped
- 60 g vegan butter, melted
- ½ teaspoon vanilla extract
- ¼ teaspoon almond extract (optional)

- 125 g pistachios, roughly chopped
Instructions
- Prepare the Pan: Line an 8×8-inch dish with parchment paper, ensuring there’s enough overhang on the sides for easy removal of the fudge once set.
- Melt the Ingredients: In a heatproof bowl, combine the sweetened condensed coconut milk, pistachio butter, chopped vegan white chocolate, melted vegan butter, vanilla extract, and almond extract if using. Place the bowl over a pan of gently simmering water (double boiler), making sure the bottom of the bowl does not touch the water to prevent scorching. Stir occasionally as the mixture melts and blends together. Be cautious to avoid any water getting into the mixture to prevent seizing.
- Add Pistachios: Once smooth and fully melted, remove the bowl from heat and fold in the roughly chopped pistachios, reserving a small handful for topping.
- Set the Fudge: Pour the fudge mixture into the lined dish and smooth the top with a spatula. Scatter the reserved pistachios evenly on top, pressing them gently so they adhere as the fudge firms up.
- Chill to Set: Place the pan in the refrigerator for at least 4 hours or ideally overnight to allow the fudge to fully set. For a faster process, you can use the freezer for about 2 hours, but be careful not to freeze solid.
- Slice and Store: Once set, leave the fudge in the pan and use a sharp knife to cut into squares. Store the fudge in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
Notes
- Ensure no water gets into the mixture while melting to prevent it from seizing.
- Using parchment paper makes it much easier to lift the fudge out of the pan for slicing.
- The almond extract is optional but adds a lovely complementary flavor to the pistachios.
- Freezing speeds up setting time but avoid leaving fudge in the freezer too long to maintain optimal texture.
