Instructions

  1. Prepare the Peanut Crust: In a food processor, combine the peanuts, oats, cocoa powder, and packed dates. Pulse until the mixture resembles coarse crumbs. Carefully add boiling water and process until combined. Add coconut oil and vanilla paste, then blend until you achieve a sticky dough consistency suitable for pressing into a tart pan.
  2. Assemble the Crust: Press the peanut crust mixture firmly and evenly into the base and slightly up the sides of a tart pan to form the tart shell. Place the crust in the refrigerator to chill while preparing the filling.
  3. Make the Date Caramel: In a blender or food processor, add the pitted dates, natural peanut butter, vanilla paste, and 2 tablespoons of dairy free cream. Blend until smooth and creamy. Add more cream, one tablespoon at a time, if needed to reach a spreadable consistency.
