Ingredients
Vanilla Cookies
- 200 g unsalted butter
- 100 g superfine sugar
- 1 egg
- 1 egg yolk
- 1 teaspoon vanilla extract
- 350 g cake flour
- ½ teaspoon salt
Vanilla Buttercream
- 250 g powdered sugar
- 80 g unsalted butter
- 25 ml milk
- 1 teaspoon vanilla extract
Instructions
- Prepare the Cookie Dough: In a mixing bowl, cream together the unsalted butter and superfine sugar until light and fluffy. Then, add the whole egg, egg yolk, and vanilla extract, mixing until fully incorporated.
- Add Dry Ingredients: Sift the cake flour and salt together, then gradually add it to the wet mixture. Mix gently until a soft dough forms, being careful not to overwork it.
- Chill the Dough: Wrap the dough in plastic wrap and refrigerate it for at least 1 hour to firm up, which will make shaping easier.
- Shape and Bake: Preheat your oven to 170°C (338°F). Roll out the dough on a lightly floured surface to about 0.5 cm thickness, then cut into desired shapes. Place cookies on a baking tray lined with parchment paper, leaving space between them. Bake for 12-15 minutes or until the edges are lightly golden. Remove from oven and let them cool completely on a wire rack.
- Make the Vanilla Buttercream: In a bowl, beat the unsalted butter until creamy. Gradually add the powdered sugar, mixing well. Add the milk and vanilla extract, continue beating until the buttercream is smooth and fluffy.
- Assemble the Cookies: Once the cookies are completely cool, spread or pipe the vanilla buttercream on the bottom side of one cookie, then sandwich with another cookie. Repeat with remaining cookies.
Notes
- Use cake flour for a tender and delicate cookie texture.
- Chilling the dough is important to prevent spreading during baking.
- Softened butter helps create a creamy and smooth buttercream.
- Cookies can be stored in an airtight container for up to 3 days for optimal freshness.
- For a variation, add food coloring or extracts to the buttercream.
