This Turkey Pesto Sandwich is a delicious and easy-to-make lunch option featuring roasted turkey, creamy provolone cheese, fresh tomato slices, and baby spinach, all layered between toasted sourdough bread spread with flavorful pesto sauce and lightly buttered for a crispy finish.

  • Total Time: 18 minutes
  • Yield: 2 sandwiches

Ingredients

Bread

  • 4 slices sourdough sandwich bread

Meat and Cheese

  • 8 slices roasted turkey
  • 6 slices provolone cheese

Vegetables

  • 1 tomato, sliced
  • ½ cup baby spinach

Condiments and Seasoning

  • 2 tablespoon pesto sauce
  • Salt and pepper, optional, to taste
  • 2 tablespoon unsalted butter, at room temperature

Instructions

  1. Prepare the bread: Lay out the 4 slices of sourdough bread on a clean surface. Spread 1 tablespoon of pesto sauce evenly on each slice to add flavor.
  2. Layer the sandwich: On two of the bread slices, layer the roasted turkey evenly, followed by the provolone cheese slices. Add the fresh tomato slices and then the baby spinach on top. Season with salt and pepper if desired.
  3. Assemble the sandwich: Place the remaining two slices of bread on top of the layered ingredients, pesto side down, to complete the sandwich.
  4. Butter the bread: Spread the softened unsalted butter evenly on the outsides of the assembled sandwich. This will help create a golden, crispy crust when toasted.
  5. Cook the sandwich: Heat a skillet or frying pan over medium heat. Place the sandwich in the pan and cook for 3-4 minutes on each side or until the bread is toasted golden brown and the cheese is melted.
  6. Serve: Once cooked, remove the sandwich from the pan, slice in half if desired, and serve immediately while warm.

Notes

  • You can substitute the sourdough bread with any sturdy sandwich bread of your choice.
  • Adding a little garlic powder to the butter before spreading can boost flavor.
  • For a lighter version, skip the butter and toast the bread separately before assembling.
  • Whole wheat or gluten-free bread can be used to suit dietary preferences.
  • If you prefer a cold sandwich, assemble without toasting and serve immediately.
