Ingredients
2–3 cups cherry tomatoes
4 cloves garlic, chopped
1/4 cup extra virgin olive oil
2 tablespoons chopped fresh oregano (or 1 tablespoon dried)
1 teaspoon crushed fennel seed
Kosher salt and black pepper, to taste
Chili flakes, to taste
1 cup marinara sauce
8 ounces cream cheese, at room temperature
3/4 cup shredded whole milk mozzarella
3/4 cup shredded provolone
2–3 balls burrata cheese, at room temperature
4–6 ounces pepperoni, sliced
Lots of fresh basil, for garnish
Instructions
- Prepare the Tomato Mixture: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped garlic and cook for 1-2 minutes until fragrant. Add the cherry tomatoes and cook for 5-7 minutes, stirring occasionally, until they start to soften and burst. Stir in oregano, fennel seeds, salt, black pepper, and chili flakes. Continue cooking for 2-3 minutes.
- Add Marinara Sauce: Pour in the marinara sauce, stirring to combine. Let the mixture simmer for 5 minutes, then remove from heat.
- Prepare the Cream Cheese Base: In a medium bowl, beat the cream cheese until smooth and creamy. Stir in the shredded mozzarella and provolone cheeses. Mix until fully combined.
- Assemble the Dip: In a large oven-safe dish, spread the cream cheese mixture evenly on the bottom. Spoon the tomato and marinara sauce mixture over the cream cheese. Tear the burrata into pieces and arrange it on top of the dip. Add the sliced pepperoni on top.
- Bake the Dip: Preheat the oven to 375°F (190°C). Place the dip in the oven and bake for 15-20 minutes, until the cheese is melted, bubbly, and golden around the edges.
- Garnish and Serve: Remove from the oven and garnish with fresh basil. Serve immediately with crusty bread, chips, or veggies for dipping.
Notes
For a vegetarian version, omit the pepperoni and add more vegetables like bell peppers, mushrooms, or spinach.
You can substitute fresh tomatoes with canned diced tomatoes, but drain them to avoid excess liquid.
If you can’t find burrata, fresh mozzarella works as a great substitute, though burrata provides a richer texture.
If you like a spicy kick, add more chili flakes or use spicy pepperoni.
