  • 12 ounces dark chocolate
  • 1 cup vegan marshmallows (quartered)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the pan: Grease a 9×9 inch (23×23 cm) pan very well and lay a large piece of parchment paper down. Ensure the parchment paper is significantly larger than the pan so you can easily pull the fudge out after it hardens.
  2. Cook the sugar mixture: In a medium-sized saucepan over medium-high heat, combine the granulated sugar, almond milk, and margarine or vegan butter. Stir constantly as you bring the mixture to a boil. Once boiling, continue stirring and let it boil for 4 minutes until it reaches the softball stage at 234ºF (112ºC) on a candy thermometer. Then remove from heat.
  3. Add chocolate and marshmallows: Immediately add the dark chocolate and quartered vegan marshmallows to the hot sugar mixture. Stir vigorously or use a hand mixer until the mixture becomes completely smooth.
  4. Flavor and pour: Add 1 teaspoon of vanilla extract and stir until fully incorporated. Then pour the smooth fudge mixture into the prepared pan.
  5. Cool and set: Let the fudge sit at room temperature for about an hour to set and harden. Once cooled, you can optionally garnish with vegan rainbow sprinkles. Wrap the fudge and store it in the fridge for 1 to 2 weeks.
