Instructions
- Prepare Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well combined.
- Cream Butter and Sugars: In a large mixing bowl, beat the salted butter, sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
- Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract and heavy cream until fully incorporated.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a soft dough.
- Make Cinnamon Spread: In a small bowl, mix the softened butter, brown sugar, cinnamon, and cornstarch together until smooth and well combined.
- Assemble the Cookies: Roll out the cookie dough on a floured surface to about ¼ inch thickness. Spread the cinnamon mixture evenly over the dough.
- Roll and Slice: Carefully roll the dough into a log shape, then slice into approximately ¼ to ½ inch thick rounds to form the cookies.
- Bake: Preheat the oven to 350°F (175°C). Place the cookie slices on a baking sheet lined with parchment paper about 2 inches apart. Bake for 10-12 minutes or until the edges are lightly golden.
- Prepare Glaze: While cookies bake, whisk together powdered sugar and water to make a smooth glaze.
- Glaze and Cool: Once cookies are baked and slightly cooled, drizzle the glaze over the top. Allow the glaze to set before serving.
Notes
- For softer cookies, do not overbake; remove when edges are lightly golden.
- You can substitute salted butter with unsalted butter and add a pinch of extra salt.
- Store cookies in an airtight container at room temperature for up to 4 days.
- For extra flavor, add a pinch of nutmeg to the cinnamon spread.
- The glaze can be thickened or thinned by adjusting powdered sugar and water amounts accordingly.
