This Best Bubbly Cheesy Shrimp Dip is a creamy, flavorful appetizer featuring tender fresh shrimp combined with a blend of three cheeses and zesty herbs. Perfectly baked until bubbly and golden, it’s a crowd-pleasing dip ideal for parties, game day, or any gathering.

  • Total Time: 40 minutes
  • Yield: 8 servings

Ingredients

Shrimp Mixture

  • 2 Tablespoons unsalted butter
  • ½ pound fresh shrimp, peeled and deveined
  • 1 teaspoon Pampered Chef garlic and herb rub
  • 2 cloves garlic, minced
  • 3 green onions, sliced
  • 2 Tablespoons fresh lemon juice

Cheese Blend

  • 1 package (8 ounces) low-fat cream cheese, softened
  • 1 cup shredded Mozzarella cheese (divided)
  • ½ cup shredded Asiago cheese
  • ¼ cup shredded Parmesan cheese
  • 2 Tablespoons low-fat sour cream

Garnish

  • Chopped parsley
  • Additional Parmesan cheese

Instructions

  1. Prepare the Shrimp: In a skillet, melt butter over medium heat. Add peeled and deveined shrimp and sprinkle with garlic and herb rub. Cook until shrimp turn pink and are opaque, about 2-3 minutes per side. Remove shrimp, let cool slightly, then chop into bite-sized pieces.
  2. Sauté Aromatics: In the same skillet, add minced garlic and sliced green onions. Cook for 1-2 minutes until fragrant and softened.
  3. Mix the Cheese Base: In a mixing bowl, combine softened cream cheese, ½ cup shredded Mozzarella, Asiago cheese, Parmesan cheese, and sour cream. Blend well to form a creamy mixture.
  4. Combine Ingredients: Stir in cooked shrimp, sautéed garlic and green onions, and lemon juice into the cheese mixture until evenly distributed.
  5. Assemble and Top: Transfer the mixture to a baking dish and top with the remaining ½ cup shredded Mozzarella cheese for a golden bubbly crust.
  6. Bake the Dip: Preheat the oven to 375°F (190°C). Bake the dip uncovered for 20-25 minutes, or until the cheese is melted, bubbly, and lightly browned on top.
  7. Garnish and Serve: Remove from oven, sprinkle with chopped parsley and additional Parmesan cheese, and serve warm with crackers, bread, or vegetable sticks.

Notes

  • You can substitute frozen shrimp if fresh is unavailable, just thaw and pat dry before cooking.
  • For extra heat, add a pinch of red pepper flakes when sautéing the garlic and green onions.
  • This dip can be prepared a day ahead and baked just before serving.
  • To keep it low-fat, use reduced-fat cheeses and sour cream as indicated.
  • Serve with toasted baguette slices, pita chips, or fresh vegetable crudités for dipping.
