Ingredients
Shrimp Mixture
- 2 Tablespoons unsalted butter
- ½ pound fresh shrimp, peeled and deveined
- 1 teaspoon Pampered Chef garlic and herb rub
- 2 cloves garlic, minced
- 3 green onions, sliced
- 2 Tablespoons fresh lemon juice
Cheese Blend
- 1 package (8 ounces) low-fat cream cheese, softened
- 1 cup shredded Mozzarella cheese (divided)
- ½ cup shredded Asiago cheese
- ¼ cup shredded Parmesan cheese
- 2 Tablespoons low-fat sour cream
Garnish
- Chopped parsley
- Additional Parmesan cheese
Instructions
- Prepare the Shrimp: In a skillet, melt butter over medium heat. Add peeled and deveined shrimp and sprinkle with garlic and herb rub. Cook until shrimp turn pink and are opaque, about 2-3 minutes per side. Remove shrimp, let cool slightly, then chop into bite-sized pieces.
- Sauté Aromatics: In the same skillet, add minced garlic and sliced green onions. Cook for 1-2 minutes until fragrant and softened.
- Mix the Cheese Base: In a mixing bowl, combine softened cream cheese, ½ cup shredded Mozzarella, Asiago cheese, Parmesan cheese, and sour cream. Blend well to form a creamy mixture.
- Combine Ingredients: Stir in cooked shrimp, sautéed garlic and green onions, and lemon juice into the cheese mixture until evenly distributed.
- Assemble and Top: Transfer the mixture to a baking dish and top with the remaining ½ cup shredded Mozzarella cheese for a golden bubbly crust.
- Bake the Dip: Preheat the oven to 375°F (190°C). Bake the dip uncovered for 20-25 minutes, or until the cheese is melted, bubbly, and lightly browned on top.
- Garnish and Serve: Remove from oven, sprinkle with chopped parsley and additional Parmesan cheese, and serve warm with crackers, bread, or vegetable sticks.
Notes
- You can substitute frozen shrimp if fresh is unavailable, just thaw and pat dry before cooking.
- For extra heat, add a pinch of red pepper flakes when sautéing the garlic and green onions.
- This dip can be prepared a day ahead and baked just before serving.
- To keep it low-fat, use reduced-fat cheeses and sour cream as indicated.
- Serve with toasted baguette slices, pita chips, or fresh vegetable crudités for dipping.
