Beef and Gravy
- 1 ½ tablespoons olive oil
- 2 lbs stew meat
- ½ cup onion, chopped
- 2 garlic cloves, minced
- ¼ cup red wine
- 10 ½ oz beef broth
- 10 ½ oz can condensed French onion soup
- 2 tablespoons Worcestershire sauce
- 1 bay leaf
- 1 sprig fresh thyme
- Salt and pepper to taste
Thickening Slurry
- 2 ½ tablespoons cornstarch
- ¼ cup water
Instructions
- Heat the oil: In a large skillet or heavy-bottomed pan, warm the olive oil over medium-high heat until shimmering.
- Brown the stew meat: Add the stew meat in batches, avoiding overcrowding, and brown on all sides to develop flavor. Remove browned pieces and set aside.
- Sauté aromatics: In the same pan, add chopped onion and minced garlic, cooking until the onion softens and turns translucent, about 3-4 minutes.
- Deglaze the pan: Pour in the red wine to deglaze, scraping up any browned bits from the pan bottom for added flavor. Let the wine reduce for 2-3 minutes.
- Add liquids and seasonings: Return the stew meat to the pan along with the beef broth, condensed French onion soup, Worcestershire sauce, bay leaf, thyme sprig, salt, and pepper. Stir to combine.
- Simmer the beef: Reduce heat to low, cover, and let the mixture simmer gently for 1.5 to 2 hours or until the beef is tender and flavors meld, stirring occasionally.
- Prepare the slurry: In a small bowl, whisk together cornstarch and water until smooth.
- Thicken the gravy: Remove the bay leaf and thyme sprig, then slowly add the cornstarch slurry to the simmering gravy, stirring continuously. Cook for another 3-5 minutes until the gravy thickens to your liking.
- Final seasoning: Taste the gravy and adjust salt and pepper as necessary.
- Serve: Serve the beef tips hot over mashed potatoes, rice, or egg noodles for a hearty, comforting meal.

- For best flavor, use a good quality red wine suitable for cooking or drinking.
- Adjust the thickness of the gravy by varying amounts of cornstarch slurry.
- You can substitute fresh thyme with dried thyme using about 1 teaspoon.
