Ingredients

1/2 cup low sodium soy sauce
1/4 cup water
2 tablespoons red wine vinegar
1 tablespoon brown sugar
1 tablespoon granulated sugar
2 teaspoons minced garlic

For the Teriyaki Turkey Lettuce Wraps:
1 tablespoon vegetable oil
1 pound ground turkey
1 cup finely chopped broccoli
2 large carrots, peeled and grated
1/2 cup diced onion
2 tablespoons minced garlic
8 large lettuce leaves (romaine, iceberg, or butter lettuce)
Instructions
For the Teriyaki Sauce:

In a small saucepan, combine soy sauce, water, red wine vinegar, brown sugar, granulated sugar, minced garlic, and ground ginger. Stir to combine and bring the mixture to a simmer over medium heat.

In a separate small bowl, mix cornstarch with warm water to create a slurry.

Slowly add the cornstarch slurry to the simmering sauce, stirring constantly. Cook for 2-3 minutes, or until the sauce thickens. Set aside.
For the Teriyaki Turkey Lettuce Wraps:

Heat vegetable oil in a large skillet over medium heat.

Add ground turkey and cook for 5-7 minutes, breaking it apart as it browns.

Add broccoli, carrots, onion, and minced garlic to the skillet. Stir to combine and cook for another 3-4 minutes, until vegetables soften.

To Serve:

Notes
Storage: Store the turkey mixture in an airtight container in the fridge for up to 3 days. Keep the lettuce leaves separate and store in the fridge wrapped in a damp paper towel for freshness.
Reheating: Reheat the turkey mixture in a skillet over medium heat, adding a splash of water or soy sauce if it’s too thick.
