Ingredients
2 pounds carrots, diagonally cut into 2–3 inch pieces
5 tablespoons butter
4 cloves garlic, minced
2 tablespoons honey
1/4 teaspoon salt (or to taste)
1/4 teaspoon fresh ground black pepper
Chopped fresh parsley for garnish

Prepare the Carrots: Peel and diagonally cut the carrots into 2-3 inch pieces. Try to keep the pieces uniform in size for even cooking.

Cook the Carrots: In a large skillet, melt 3 tablespoons of butter over medium heat. Add the carrots and sauté for about 8-10 minutes, stirring occasionally, until they are tender and lightly golden brown.

Add Garlic and Honey: Push the carrots to one side of the pan and add the remaining 2 tablespoons of butter to the empty side. Once the butter is melted, add the minced garlic and sauté for 1 minute until fragrant. Stir in the honey, salt, and pepper, coating the carrots evenly.

Toss and Garnish: Once the carrots are fully coated and have absorbed the flavors, remove from heat and garnish with freshly chopped parsley.
Notes
For a spicy twist, add red pepper flakes or cayenne pepper while cooking.
Substitute the butter with olive oil or plant-based butter to make this dish vegan.
Top with toasted almonds or pecans for added crunch.
