- 2 tablespoons fish sauce

- 2 green onions, thinly sliced
Instructions
- Heat the Oil: In a large skillet over medium heat, warm 1 tablespoon of oil until shimmering to prepare for sautéing the aromatics and meat.
- Sauté Onion and Garlic: Add the diced onion and chopped garlic to the skillet. Cook, stirring occasionally, until the onion becomes translucent and fragrant, about 3-4 minutes.
- Add Ground Chicken: Crumble the ground chicken into the skillet. Cook thoroughly, stirring and breaking up the meat, until no pink remains and the chicken is cooked through, approximately 6-8 minutes.
- Include Bell Peppers: Stir in the diced red and yellow bell peppers (if using). Cook for an additional 3-4 minutes until the peppers slightly soften but still retain some crunch.
- Mix in Sauces: Pour in the 3 tablespoons of sweet chili sauce, 2 tablespoons fish sauce, 2 tablespoons lime juice (or rice vinegar), and 1 tablespoon oyster sauce. Stir well to combine all the flavors evenly, allowing the mixture to simmer for 2-3 minutes so the sauce can thicken and coat the ingredients.
- Garnish and Serve: Remove the skillet from heat. Sprinkle chopped cilantro and thinly sliced green onions over the top. Serve hot with steamed rice or your choice of side.
Notes
- For a spicier version, add chopped fresh chilies or a dash of sriracha.
- Ground beef can be substituted for chicken if preferred.
- If fresh bell peppers are unavailable, frozen diced bell peppers can be used.
- Adjust sweetness and tanginess by altering the amount of sweet chili sauce and lime juice to taste.
- This dish pairs wonderfully with jasmine or basmati rice.
