Instructions
- Prepare the Filling: In a medium bowl, combine the sliced strawberries, granulated sugar, lemon zest, cornstarch, and vanilla. Gently toss to coat the fruit evenly and allow the mixture to sit while you prepare the crust, so the flavors meld and the filling thickens slightly.
- Prepare the Crust: Preheat your oven to 400°F (200°C). Roll out the refrigerated pie crust onto a parchment-lined baking sheet. If it is already pre-rolled, simply unroll it carefully.
- Assemble the Galette: Spoon the strawberry filling onto the center of the pie crust, leaving about a 2-inch border around the edges. Fold the edges of the crust up over the filling, pleating it gently to create a rustic edge and partially cover the mixture.
- Apply Egg Wash and Sugar: Beat the egg and brush it over the folded edges of the crust to give it a golden sheen when baked. Sprinkle the turbinado sugar over the edges and a little on the filling for added crunch and sweetness.
- Bake: Place the galette in the oven and bake for about 30-35 minutes or until the crust is golden brown and the filling is bubbling. Keep an eye on the edges to prevent over-browning.
- Cool and Serve: Remove the galette from the oven and let it cool on the baking sheet for at least 15 minutes to allow the filling to set. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.
