Strawberry Simple Syrup
- 2 cups fresh strawberries, quartered, plus more for garnish
- 2 1-inch pieces orange peel
- 1/4 cup (50 g) granulated sugar
- 1/4 cup (57 ml) water
- 2 sprigs fresh mint, plus more for garnish
Mimosa Cocktail
- 1/3 cup (76 ml) Grand Marnier liqueur
- 1 cup (227 ml) freshly squeezed orange juice
- 1 bottle prosecco or champagne
- Orange slices, for garnish
Instructions
- Make the strawberry simple syrup: In a medium saucepan over medium heat, combine the quartered strawberries, orange peel, granulated sugar, and water. Bring the mixture to a rolling simmer, then reduce the heat to medium-low. Gently mash the strawberries with a wooden spoon and continue simmering until the sugar dissolves completely and the syrup thickens, about 20 minutes.
- Cool and strain the syrup: Remove the saucepan from heat. Stir in the fresh mint sprigs and let the syrup cool for 30 minutes. After cooling, discard the mint and orange peel, then strain the syrup through a fine-mesh strainer to remove solids. Transfer the strained syrup to an airtight container and refrigerate until chilled, up to 1 week. Stir well before using.
- Prepare the mimosa mixture: Stir the Grand Marnier liqueur into the chilled strawberry simple syrup until well combined.
- Assemble the mimosas: In each champagne flute, pour 2 tablespoons of the strawberry simple syrup mixture, followed by 3 tablespoons of freshly squeezed orange juice. Top almost to the rim with prosecco or champagne.
- Garnish and serve: Place a small strawberry and a slice of orange on the rim of each glass, and garnish with a sprig of fresh mint. Serve immediately. This recipe yields about 6 mimosas.
Notes
- You can prepare the strawberry simple syrup up to 1 week in advance and keep it refrigerated.
- Adjust the sweetness by modifying the sugar amount in the syrup, depending on your taste and the sweetness of your fruit.
- For a non-alcoholic version, replace prosecco with sparkling water and omit Grand Marnier.
