Ingredients
Dressing
- 2 tablespoons lemon juice
- 2 tablespoons champagne or white wine vinegar
- 2 tablespoons maple syrup or agave nectar
- 1 teaspoon Dijon mustard
- 1 small shallot, peeled
- ½ teaspoon vegan Worcestershire sauce
- Sea salt and ground black pepper, to taste
- ⅓ cup olive oil
- ¼ cup fresh mint leaves
- 1 tablespoon poppy seeds
Salad
- 8-10 oz butter lettuce (Bibb, Boston, or butter Crunch)
- 2 cups chopped strawberries
- ¼ cup mint leaves, roughly chopped
- ¼ cup shelled salted pistachios, chopped
- Sea salt and ground black pepper, to taste
- 1 large ripe avocado, peeled and diced
Instructions
- Prepare the dressing: Combine lemon juice, champagne vinegar, maple syrup, Dijon mustard, peeled shallot, vegan Worcestershire sauce, sea salt, ground black pepper, and olive oil in an upright blender. Blend on high for about 1 minute until the mixture is completely smooth. Add fresh mint leaves and blend slowly until the mint is finely minced in the dressing. Transfer the dressing to a jar or measuring cup and mix in the poppy seeds. Set aside.
- Prepare the salad base: Remove cores from butter lettuce and chop or tear into bite-sized pieces. Place the lettuce into a large serving bowl.
- Add salad ingredients and dress: Add chopped strawberries, roughly chopped mint leaves, and half of the pistachios to the lettuce. Season with sea salt and ground black pepper. Pour half of the prepared dressing over the salad and toss gently to combine.
- Finish and serve: Top the tossed salad with diced avocado, remaining chopped pistachios, and drizzle the remaining dressing on top. Serve immediately to enjoy fresh and vibrant flavors.
Notes
- To keep the salad nut-free, substitute toasted sunflower seeds for the pistachios.
- Vegan Worcestershire sauce contains wheat; for gluten-free, substitute with tamari.
- The recipe uses about 3 small heads of butter lettuce.
- Optional: Add crumbled vegan feta cheese for extra flavor if desired.
