Ingredients
Dates and Filling
- 6 Medjool dates
- 6-8 tsp peanut butter (or any other nut butter)
Toppings
- Coconut flakes
- Walnuts
- Chocolate nibs (or dark chocolate, or chocolate chips)
- Freeze-dried raspberries
- Chopped pistachios
Instructions
- Prepare the Dates: Using a knife, make a lengthwise slit down each Medjool date and carefully remove the pits to create a cavity for the filling.
- Fill the Dates: With a teaspoon, fill each pitted date generously with peanut butter or your preferred nut butter, adjusting the quantity according to the size of each date.
- Add Toppings: Sprinkle your choice of toppings over the filled dates, such as coconut flakes, whole walnuts, chocolate nibs, freeze-dried raspberries, or chopped pistachios, to add texture and flavor.
- Serve and Enjoy: Serve immediately as a delicious snack or dessert, or store in an airtight container for later enjoyment.
Notes
- Alternative fillings include almond butter, cashew nut butter, hazelnut butter, tahini for a bittersweet option, or homemade Nutella for an extra indulgent treat. Plant-based yogurt also works well, especially in warmer weather.
- To store, place stuffed dates in an airtight container and refrigerate or keep at room temperature for up to 2-3 weeks to maintain freshness.
